i had a dry baking spell - couldn't really find anything i really wanted to bake. i rehashed several recipes - eclairs and cupcakes - just to try to freshen things up.
a few days ago, i updated a facebook status with oreo cheesecake cupcakes vs shortbread cookies match and a stroke of genius in the form of my very lovely boss suggested doing Oreo Cheesecake Cookies.
the traditional cheesecake recipe combines cream cheese, vanilla, butter and sugar. how can i update this to churn this into a magical cookie?
thankfully, pioneer woman (my bible to everything baked and lovely) gave me the perfect recipe for the most surreal experience:
a gorgeous crispy-on-the-edge cookie with a soft puffy cream cheese centre.
(i apologise, the dslr is out of order so got to make do with instagram on iphone.)
Ingredients
Makes 30 - 40 cookies
- ¾ cup of butter, softened
- 127½ grams of cream cheese, room temp
- 1⅓ cup of granulated sugar
- 1½ teaspoon of vanilla extract
- 1½ cup of plain flour, sifted
- ½ cup of chocolate chips
- ¾ cup of oreo cookies, crushed (you can leave the vanilla bits in)
Now, down with the dirty
- preheat the oven to 375˚F / 190˚C.
- cream butter and cream cheese in a mixing bowl with a standing or hand mixer - till mixture is creamy and smooth.
- add in sugar and vanilla extract. mix till incorporated
- In batches, slowly incorporate flour into the wet mixture. try to keep the mixer on on low and scrape the sides regularly.
- once everything is incorporated, stir in the chocolate chips
- now, you'll have an awesome batter like this:
- using two spoons, scoop the batter and drizzle oreo cookie crumbs all over:
- place the cookie crumbed batter on the baking sheet, 2 inches apart
- bake for 12-15 minutes, until the edges are crisp and the middle is slight puffy.
- let them rest for 10minutes so the centres can harden up.
