we all love cupcakes.

cupcakes, just begging to be iced.

Yes, I dare say, we all love cupcakes. they are the buttery personification of comfort.
I love cupcakes that are unadventurous, straightforward and buttery. Something about cupcakes just scream "eat me!".

So I embarked on a journey to find THE perfect cupcake recipe which fulfills these criterias:
  1. Buttery
  2. Easy
  3. Quick
  4. Yummy
And yes, a recipe actually exist.

Inspiration: Pioneer Woman Cooks - Yellow Cupcakes with Sticky Chocolate Icing

Ingredients:

  • 2 cups Cake Flour
  • 2 teaspoons Baking Soda
  • ¾ teaspoons Salt
  • 1 stick Unsalted Butter, Softened
  • 1 cup Sugar
  • 3 whole Eggs at Room Temperature
  • 2 teaspoons Vanilla Essence
  • ¾ cups plus of Whole Milk
  • Chocolate Chips or Raisins (optional, this recipe can go plain)
  • FOR THE ICING:
  • 1 cup Sweetened, Condensed Milk
  • 6 ounces, weight 100% cocoa Chocolate (unsweetened Chocolate)
  • 3 Tablespoons Butter
  • 2 Tablespoons of Cocoa


Now, lets begin.

Preheat oven to 170˚C.

Sift cake flour, salt and baking soda into a dry bowl. Mix them all up together.

In a separate bowl, cream the butter and suger till well incorporated. Use an electric mixer with whisk attachement

Add in one egg at the time and mix after every egg till incorporated.

Add vanilla essence and mix to combine

Now, here's the tricky bit: mix 1/3 of the dry ingredients in the butter mix and whisk. Then add 1/3 of the whole milk in and whisk. Repeat this process till all the dry ingredients and milk are mixed and you have one giant mix of buttery awesomeness.

Line your cupcake tray with your very pretty cupcake paper holders.

Fill the holders till 3/4 full with batter. If you want Chocolate Chip cupcakes, add in your chips into the holders by first scooping some batter, add the chips then batter on top.
And as always, BE GENEROUS will those chips - people appreciate it!

Pop them into the oven for 18 - 20 minutes. You know when they are done when they are yellow brown on top and an inserted toothpick comes out dry and clean.

*Very important: always let your cupcakes cool before you ice them.

Prepare the icing:

Over low heat on a stove, combine the condensed milk, cocoa, chocolate and butter until all incorporated. No need to boil, take it off the stove when you see one giant brown mix.

To adjust the consistency, just add warm water with a little pit of condensed milk. This helps you get it thinner and makes it easier to spread. This icing turns hard after a while, so you got to ice fast!

Ice those cupcakes and garnish with your favourite condiements - I always go for hundreds and thousands but go wild!
